315.5 oz canschili beans**drain and rinse optional**
214.5 oz cansstewed tomatoes
1quarttomato juice (homemade is best!)
Instructions
Brown the ground mutton in the pot, and then drain
Chop the onion, garlic, and bell peppers and set aside
Return the mutton to the pot, and then add the chopped vegetables and stir. Let the vegetables sweat for approximately 5 minutes.
Add all seasonings, and stir well to combine. Continue stirring for a few minutes to be sure all the seasonings get warmed and fragrant.
Add beans, stewed tomatoes, and tomato juice. Stir well and let simmer for at least 30 minutes. You could also put this in your crockpot on low for a few hours. Just remember that chili always tastes better the next day, once the flavors have time to marry!
Notes
For a little more heat, try adding 1 t. crushed red pepper to the spice mixture Garnish with jalapenos, sour cream, cheese, or any of your favorite chili toppings!
